Cheesy Kohlrabi
This recipe transforms kohlrabi into a rich and comforting side dish. The vegetable is first simmered until tender, then combined with a creamy, homemade cheese sauce. The sauce is prepared by making a roux with butter and flour, then whisking in condensed chicken broth until thickened. Shredded American cheese is stirred in to create a smooth, savoury coating for the kohlrabi. A final sprinkle of allspice and a garnish of fresh parsley complete the dish.
Ingredients
- 8 medium kohlrabi, peeled and sliced into 1/4 inch slices
- 1/2 teaspoon salt
- 3 teaspoons butter
- 1/4 cup all-purpose flour
- 1 (10 1/2 ounce) can condensed chicken broth
- 1/4 cup shredded American cheese
- 1/8 teaspoon ground allspice
- 2 teaspoons chopped parsley (for garnish)
Method
- Place the peeled and sliced kohlrabi into a 2 quart saucepan with 1 inch of boiling water and the salt.
- Lower the heat, put the lid on the pan, and let it simmer for 30 minutes.
- Drain the cooked kohlrabi well.
- While the kohlrabi cooks, melt the butter in a separate 3 quart saucepan.
- Stir the flour into the hot butter until you have a smooth paste.
- Pour in the undiluted chicken broth gradually, cooking and stirring continuously until the sauce thickens.
- Take the pan off the heat and mix in the shredded cheese until it has fully melted into the sauce.
- Add the drained kohlrabi to the cheese sauce and cook until everything is hot.
- Finish by sprinkling the allspice over the mixture and garnishing with the chopped parsley.
