Cheesy Jalapeno Baked Stuffed Chicken
This recipe features chicken breasts stuffed with a rich filling of cream cheese, Monterey Jack, jalapenos, bacon and green onions. The rolls are coated in a zesty lime and oil mixture, then breadcrumbs, before being baked until golden. It's a flavourful main dish that serves four to six people and takes about 42 minutes to prepare and cook.
Ingredients
- 2 slices center cut bacon, cooked and crumbled
- 3 jalapenos, chopped (remove seeds for milder taste)
- 3 ounces cream cheese, softened
- 4 ounces monterey jack cheese, shredded
- 2 tablespoons green onions, thin sliced
- 8 (3 ounce) skinless chicken breasts, cutlets pounded thin
- 1/2 cup Italian seasoned breadcrumbs
- 1 1/2 juicy limes, juice of
- 1 1/2 tablespoons olive oil
- salt and fresh black pepper
- olive oil nonstick cooking spray
Method
- Pat the chicken cutlets dry, then season them with salt and pepper. Heat your oven to 450°. Prepare a baking dish with a light coating of non-stick spray.
- In a medium bowl, mix together the softened cream cheese, shredded Monterey Jack cheese, sliced green onions, chopped jalapeno and crumbled bacon.
- Arrange the chicken cutlets flat and spread approximately 2 tablespoons of the cheese mixture onto each one. Roll them up loosely and use toothpicks to secure the ends, keeping the filling inside.
- Put the Italian seasoned breadcrumbs into one bowl. In a separate bowl, whisk the olive oil with the lime juice, plus some salt and pepper.
- First dip each chicken roll into the lime and oil mixture, then coat it in the breadcrumbs. Place it in the baking dish with the seam side facing down. Repeat for all the chicken, then give the tops a light spray with oil.
- Bake for 22-25 minutes.
