Cheesy Italian Tortellini
This hearty Italian dinner features a rich meat sauce simmered slowly in a crock pot. Ground beef and Italian sausage are browned before being combined with marinara sauce, diced tomatoes, and mushrooms to cook for several hours. Just before serving, fresh cheese tortellini is stirred into the sauce and topped with a blend of mozzarella and Cheddar cheese for a final, melty finish. Ingredients
- 0.5 pound ground beef
- 0.5 pound Italian sausage, casings removed
- 1 (16 ounce) jar marinara sauce
- 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
- 1 (4.5 ounce) can sliced mushrooms
- 1 (9 ounce) package refrigerated or fresh cheese tortellini
- 1 cup shredded mozzarella cheese
- 0.5 cup shredded Cheddar cheese
Method
- Place a large skillet on the heat. Cook the ground beef and Italian sausage, stirring, until they are browned and crumbly, about 10 minutes. Drain off any excess fat.
- Transfer the cooked meats to a slow cooker. Add the marinara sauce, the can of tomatoes with its juices, and the sliced mushrooms. Put the lid on and cook on the Low setting for 7 to 8 hours.
- Mix the cheese tortellini into the hot meat sauce. Scatter the shredded mozzarella and Cheddar cheese over the top. Cover the cooker again and continue to cook on Low until the pasta is tender, about 15 more minutes.
