Cheesy Hominy Casserole
This rich casserole is a fantastic side dish discovered in an old cookbook. It combines hominy with sour cream, Monterey Jack cheese, green chillies, and jalapeños for a creamy, flavourful bake. Topped with breadcrumbs and butter, it is cooked until bubbly and golden. It makes a wonderful complement to a wide variety of main dishes.
Ingredients
- 61 ounces cannd hominy, drained
- 6 ounces canned chopped green chilies, drained
- 24 ounces sour cream
- 8 ounces monterey jack cheese, shred
- 1/4 cup onion, minced
- 2 jalapeno peppers, seeded and finely chopped
- 1/4 cup fine dry breadcrumb
- 1/4 cup butter or 1/4 cup margarine
- 1 whole green chili, sliced crosswise
- pimento strips
Method
- Mix the first six listed ingredients together in a large bowl, then transfer the mixture to a greased 13 x 9 x 2 inch baking dish.
- Scatter the breadcrumbs evenly over the top and place small pieces of butter across the surface.
- Place the dish in the oven and bake without a cover at 350 degrees for 30 minutes.
- Decorate the finished bake with slices of green chilli and strips of pimiento.
