Cheesy Hash Brown Potatoes
This satisfying potato bake is an ideal choice for a festive brunch or a shared meal. Thawed hash browns are combined with a rich, creamy mixture of cheese, soup and sour cream, then baked until bubbling. A final layer of buttery crushed cereal adds a delightful crispy finish. It yields 12 squares, serving 6 to 8 people, and requires about 75 minutes to prepare and cook.
Ingredients
- 2 lbs shredded hash browns, thawed
- 1/2 cup butter, melted
- 1/4 teaspoon pepper
- 1 teaspoon salt
- 1/2 cup chopped onion
- 2 cups sour cream
- 1 (10 1/2 ounce) can cream of chicken soup
- 2 cups cheddar cheese, shredded
- 2 cups crushed corn flakes or 2 cups crushed potato chips
- 1/4 cup melted butter or 1 -1 1/2 tablespoon spray margarine
Method
- Grease a 9 x 13 inch baking dish with butter and preheat your oven to 350 degrees.
- In a large mixing bowl, thoroughly combine the first eight ingredients listed.
- Transfer the mixture into the prepared baking dish and bake for 15 minutes at 350 degrees.
- While the potatoes bake, mix the crushed corn flakes with the melted butter in a small bowl using a fork. Take the dish from the oven and scatter the buttery flakes evenly over the top. Return it to the oven, uncovered, and bake for a further 45 minutes.
