Cheesy Hash Brown Potatoes

Ingredients

  • 2 lbs shredded hash browns, thawed
  • 1/2 cup butter, melted
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 cup chopped onion
  • 2 cups sour cream
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 2 cups cheddar cheese, shredded
  • 2 cups crushed corn flakes or 2 cups crushed potato chips
  • 1/4 cup melted butter or 1 -1 1/2 tablespoon spray margarine

Method

  1. Grease a 9 x 13 inch baking dish with butter and preheat your oven to 350 degrees.
  2. In a large mixing bowl, thoroughly combine the first eight ingredients listed.
  3. Transfer the mixture into the prepared baking dish and bake for 15 minutes at 350 degrees.
  4. While the potatoes bake, mix the crushed corn flakes with the melted butter in a small bowl using a fork. Take the dish from the oven and scatter the buttery flakes evenly over the top. Return it to the oven, uncovered, and bake for a further 45 minutes.
