Cheesy Hamburger Potato Casserole
This hearty casserole combines browned hamburger with onion and green pepper, mixed into a creamy sauce with hash brown potatoes. Bound with cream of chicken soup and sour cream, it is finished with a cheesy topping and optional crispy crumbs. The dish bakes in the oven until thoroughly heated and bubbling, creating a convenient and filling meal for four.
Ingredients
- 1 lb hamburger
- 1/2 medium onion, chopped
- 1/2 medium green pepper, chopped
- 0.5 (30 ounce) bag frozen hash browns
- 1 (10 1/2 ounce) can cream of chicken soup
- 3/4 cup nonfat sour cream
- 1/2 cup low-fat grated cheddar cheese
- 2 teaspoons beef bouillon
- fresh ground pepper
- crushed Ritz crackers (optional) or panko breadcrumbs (optional)
Method
- Set your oven to heat to 425 degrees farenheit.
- Cook the hamburger with the chopped onion and green pepper in a pan until the meat is fully browned. Drain any excess fat.
- With the heat off, mix in all the remaining ingredients. You may choose to microwave the frozen hash browns for about 5 minutes, stirring halfway, before adding them to shorten the baking duration, though this step is optional.
- Lightly grease a 9x11 baking dish and transfer the mixture into it. If you wish, scatter crushed Ritz crackers or panko breadcrumbs over the surface. Seal the dish tightly with aluminium foil.
- Place in the oven to bake for 35-45 minutes, until the contents are hot and bubbling. If you added crackers or crumbs, take the foil off for the final 5 minutes to allow the topping to colour.
