Cheesy Hamburger Potato Casserole

Ingredients

  • 1 lb hamburger
  • 1/2 medium onion, chopped
  • 1/2 medium green pepper, chopped
  • 0.5 (30 ounce) bag frozen hash browns
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 3/4 cup nonfat sour cream
  • 1/2 cup low-fat grated cheddar cheese
  • 2 teaspoons beef bouillon
  • fresh ground pepper
  • crushed Ritz crackers (optional) or panko breadcrumbs (optional)

Method

  1. Set your oven to heat to 425 degrees farenheit.
  2. Cook the hamburger with the chopped onion and green pepper in a pan until the meat is fully browned. Drain any excess fat.
  3. With the heat off, mix in all the remaining ingredients. You may choose to microwave the frozen hash browns for about 5 minutes, stirring halfway, before adding them to shorten the baking duration, though this step is optional.
  4. Lightly grease a 9x11 baking dish and transfer the mixture into it. If you wish, scatter crushed Ritz crackers or panko breadcrumbs over the surface. Seal the dish tightly with aluminium foil.
