Cheesy Ham and Potatoes Au Gratin

Ingredients

  • 2 lbs potatoes, peeled and thinly sliced
  • 2 cups fully cooked diced ham
  • 2 medium onions, chopped
  • 1/3 cup butter
  • 3 teaspoons all-purpose flour
  • 14 ounces milk
  • 2 cups shredded cheddar cheese
  • 3/4 teaspoon salt
  • 1 dash black pepper
  • 1 (14 ounce) can cream of mushroom soup
  • 1/2 cup plain breadcrumbs

Method

  1. Bring a large dutch oven of water to the boil and cook the potatoes for 15 minutes until tender.
  2. Melt the butter in a medium saucepan.
  3. Mix in the flour until smooth, then add the chopped onions and cook for 3-5 minutes until translucent.
  4. Pour in the milk gradually, stirring continuously until the sauce thickens and begins to bubble.
  5. Add the shredded cheddar cheese, salt and black pepper.
  6. Stir until the cheese has melted, then mix in the cream of mushroom soup.
  7. Pour this cheese sauce over the cooked potatoes and mix gently, then fold in the diced ham.
  8. Bake in a 350 degree oven for 35 to 40 minutes or until the dish is bubbly.
