Cheesy Ham and Potatoes Au Gratin
This hearty one dish meal combines tender sliced potatoes and savoury ham in a creamy, cheesy sauce. A simple white sauce is enriched with cheddar and mushroom soup before being baked with a breadcrumb topping. It serves four to six people and takes about 65 minutes to prepare and cook.
Ingredients
- 2 lbs potatoes, peeled and thinly sliced
- 2 cups fully cooked diced ham
- 2 medium onions, chopped
- 1/3 cup butter
- 3 teaspoons all-purpose flour
- 14 ounces milk
- 2 cups shredded cheddar cheese
- 3/4 teaspoon salt
- 1 dash black pepper
- 1 (14 ounce) can cream of mushroom soup
- 1/2 cup plain breadcrumbs
Method
- Bring a large dutch oven of water to the boil and cook the potatoes for 15 minutes until tender.
- Melt the butter in a medium saucepan.
- Mix in the flour until smooth, then add the chopped onions and cook for 3-5 minutes until translucent.
- Pour in the milk gradually, stirring continuously until the sauce thickens and begins to bubble.
- Add the shredded cheddar cheese, salt and black pepper.
- Stir until the cheese has melted, then mix in the cream of mushroom soup.
- Pour this cheese sauce over the cooked potatoes and mix gently, then fold in the diced ham.
- Bake in a 350 degree oven for 35 to 40 minutes or until the dish is bubbly.
