Cheesy Ham and Broccoli Pasta

Ingredients

  • 300g pasta (we used conchiglie)
  • 1 head of broccoli cut into small florets
  • 1 tbsp oil
  • 1 onion finely chopped
  • 2 garlic cloves crushed
  • 250g ham cut into chunks (get a nice thick slice from the deli counter)
  • 300ml pot double cream
  • 1 tbsp English mustard
  • 140g mature cheddar grated

Method

  1. Boil a large pan of water and cook the pasta according to the packet directions, adding the broccoli florets for the last 4 mins of cooking. Drain and set this aside.
  2. While the pasta cooks, prepare the sauce. Warm the oil in a large pan and cook the chopped onion for 5 mins until softened. Add the crushed garlic and cook for 1 min more. Mix in the ham chunks, double cream and mustard, then bring the mixture to a boil. Add the drained pasta and broccoli, then stir through the grated cheese until everything is coated in the sauce.
