Cheesy Ham and Potato Casserole
This hearty casserole is a complete one-dish meal. It layers diced potatoes and ham with a creamy, cheesy sauce made from sour cream, soup and cheddar. After assembling, it bakes until the top is golden and the sauce is bubbling throughout. It serves six people and takes roughly 90 minutes from start to finish.
Ingredients
- 5 -6 large russet potatoes, peeled, diced, and boiled until almost done
- 1/2 lb ham, diced
- 1 sweet onion
- 2 cups shredded cheddar cheese
- 2 cups sour cream
- 1 (10 ounce) can cream of chicken soup or 1 (10 ounce) can celery soup
- 1/4 cup butter
- salt and pepper
Method
- Cook the diced ham and onion together until the ham takes on a little colour and any liquid has evaporated.
- In a separate pan, melt the butter with the can of soup over a low temperature.
- Still over a low heat, stir the shredded cheese and sour cream into the soup mixture until everything is smooth and melted.
- Place the boiled potatoes and the ham mixture into a 13x9 inch baking dish. Pour the cheese sauce over the top without mixing. Bake at 350 degrees F for about 45 minutes to an hour.
