Cheesy Ham and Hash Brown Casserole
This family favourite breakfast casserole combines frozen hash brown potatoes with diced ham in a rich, creamy sauce made from condensed soup and sour cream. Topped with a generous layer of Parmesan and Cheddar cheese, it bakes until golden and bubbly. It's an ideal make-ahead dish for a lazy weekend brunch or a hearty holiday morning meal, yielding a full 9x13-inch pan.
Ingredients

- 1 (32 ounce) package frozen hash brown potatoes
- 2 (10.5 ounce) cans condensed cream of potato soup
- 1 (16 ounce) container sour cream
- 2 cups shredded sharp Cheddar cheese
- 8 ounces cooked, diced ham
- 1.5 cups grated Parmesan cheese
Method
- Collect your ingredients. Set your oven to 375 degrees F (190 degrees C). Use cooking spray to lightly coat a 9x13-inch baking dish.
- In a large mixing bowl, combine the frozen hash browns, condensed potato soup, sour cream, shredded Cheddar cheese and diced ham. Stir until everything is thoroughly mixed.
