Cheesy Ham and Asparagus Bake

Ingredients

  • 1.5 cups chopped cooked ham
  • 1 (10 ounce) package frozen cut asparagus, thawed
  • 0.5 cup chopped onion
  • 0.25 cup chopped red bell peppers
  • 8 eggs
  • 2 cups milk
  • 1 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 0.75 teaspoon dried tarragon
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded Cheddar cheese

Method

  1. Set your oven to 425 degrees F (220 degrees C). Prepare a 9x13-inch baking dish by lightly greasing it.
  2. Mix the chopped ham, thawed asparagus, onion, and red bell pepper together in the greased dish. In a separate large bowl, whisk the eggs, milk, flour, Parmesan cheese, dried tarragon, salt, and black pepper. Pour this mixture over the ham and vegetables.
  3. Place the dish in the oven and bake until a knife inserted into the middle comes out clean, about 20 minutes. Take it out and sprinkle the shredded Cheddar cheese over the top. Return to the oven until the cheese has melted, 3 to 5 minutes. Allow the bake to stand for 5 to 10 minutes before you serve it.
