Cheesy Ground Beef and Potatoes

Ingredients

  • 3 cups thinly sliced, peeled potatoes
  • 2 tablespoons butter, melted
  • 0.5 teaspoon salt
  • 1 pound ground beef
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1.5 cups shredded sharp Cheddar cheese, divided
  • 0.5 cup milk
  • salt and ground black pepper to taste

Method

  1. Set your oven to 400 degrees F (200 degrees C). Coat a 9x13-inch casserole dish with nonstick spray.
  2. In a large bowl, combine the sliced potatoes with the melted butter and 0.5 teaspoon of salt, mixing to coat them evenly. Layer the potato slices to cover the base and sides of the prepared dish.
  3. Bake the potatoes until they are fork-tender, which should take 20 to 30 minutes.
  4. Meanwhile, place a large skillet on the heat. Cook the ground beef, breaking it up as it cooks, until it is browned and crumbly, 5 to 7 minutes. Drain off any excess fat.
