Cheesy Grits and Shrimp
This one dish meal combines creamy grits cooked in broth with two types of cheese, then mixed with sautéed vegetables, cooked shrimp and tomatoes. The mixture is baked until hot and bubbly. Despite initial doubts, it proves to be a flavourful and satisfying dish that serves four people in roughly half an hour.
Ingredients
- 4 cups chicken broth
- 1/2 teaspoon salt
- 1 cup grits (not instant)
- 1 cup shredded cheddar cheese
- 1 cup shredded monterey jack cheese (with or without peppers)
- 2 tablespoons butter
- 6 green onions, chopped
- 1 green bell pepper, chopped
- 1 minced garlic clove
- 1 1/2 lbs shrimp (peeled and cooked)
- 1 (10 ounce) can Rotel Tomatoes (drained)
- 1/4 teaspoon salt
Method
- Cook the grits in the chicken broth with 1/2 teaspoon salt, following the directions on the packet.
- Set aside a quarter cup of each shredded cheese for later, then mix the remaining cheddar and Monterey Jack together.
- Heat the butter in a large frying pan and cook the chopped green onions, green bell pepper and minced garlic until softened.
- Stir this sautéed vegetable mixture into the prepared grits.
- Add the drained Rotel tomatoes, the peeled cooked shrimp and the 1/4 teaspoon salt to the grits and combine everything well.
- Transfer the mixture to a two-quart casserole dish and top it with the reserved cheeses.
- Bake at 350°F for 30-45 minutes. Allow it to rest for 5 minutes before serving.
- NOTE: This is rather spicy and I don't handle 'hot' to well, so I also tried it with diced tomatoes and not Rotel. It was okay, but to me better with the Rotel.
