Cheesy Green Chili Frittata
This baked frittata is an ideal choice for a weekend brunch or a satisfying meal any time. It combines eggs with diced green chilies, cottage cheese and cheddar for a rich, fluffy result. The dish bakes in two stages for a perfectly set texture. It's designed to serve four people and is ready in about 50 minutes. Optional garnishes like tomato and fresh basil add a fresh finish.
Ingredients
- 5 eggs, beaten
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1 pinch pepper
- 1 (7 ounce) can diced green chilies, drained
- 8 ounces small curd cottage cheese
- 1/2 cup shredded cheddar cheese
- 2 tablespoons melted butter (do not use margarine)
- 1 small roma tomato (to garnish) (optional)
- 1 -2 fresh basil leaf, chopped to garnish (optional)
Method
- Heat your oven to 400 degrees.
- Lightly grease an 8"x12" baking dish, noting a 9"x13" pan will yield a thinner result.
- Take a large bowl and beat the eggs with a fork, then incorporate the flour, baking powder, salt and pepper until fully blended.
- Fold in the drained green chilies, cottage cheese, shredded cheddar cheese and the melted butter.
- Transfer the combined mixture into your prepared dish and top with optional tomato slices and chopped basil.
- Bake without a cover for 15 minutes at 400 degrees, then lower the temperature to 325 degrees and bake for about 35 minutes more until firmly set.
- Slice and serve immediately.
