This baked frittata is an ideal choice for a weekend brunch or a satisfying meal any time. It combines eggs with diced green chilies, cottage cheese and cheddar for a rich, fluffy result. The dish bakes in two stages for a perfectly set texture. It's designed to serve four people and is ready in about 50 minutes. Optional garnishes like tomato and fresh basil add a fresh finish.

Cheesy Green Chili Frittata

Ingredients

  • 5 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 pinch pepper
  • 1 (7 ounce) can diced green chilies, drained
  • 8 ounces small curd cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons melted butter (do not use margarine)
  • 1 small roma tomato (to garnish) (optional)
  • 1 -2 fresh basil leaf, chopped to garnish (optional)

Method

  1. Heat your oven to 400 degrees.
  2. Lightly grease an 8"x12" baking dish, noting a 9"x13" pan will yield a thinner result.
  3. Take a large bowl and beat the eggs with a fork, then incorporate the flour, baking powder, salt and pepper until fully blended.
  4. Fold in the drained green chilies, cottage cheese, shredded cheddar cheese and the melted butter.
  5. Transfer the combined mixture into your prepared dish and top with optional tomato slices and chopped basil.
  6. Bake without a cover for 15 minutes at 400 degrees, then lower the temperature to 325 degrees and bake for about 35 minutes more until firmly set.
  7. Slice and serve immediately.
