Cheesy Green Beans with Bacon

Ingredients

  • 10 slices bacon
  • 2 (16 ounce) packages frozen cut green beans
  • 1 cup water
  • 1 pound sliced fresh mushrooms
  • 0.75 cup chopped onion
  • 0.75 teaspoon ground black pepper
  • 1 (16 ounce) jar processed cheese sauce

Method

  1. Arrange the bacon slices in a large, deep skillet. Cook them until they are evenly browned. Once cooked, drain them on paper towels, crumble the bacon, and set it aside. Keep 1/4 cup of the bacon drippings in the same skillet.
  2. Put the frozen green beans and 1 cup of water into a medium saucepan. Bring the water to a boil, then lower the heat, cover the pan, and let the beans simmer for 6 minutes. They should be tender but still crisp. Drain the water from the beans.
  3. Add the sliced mushrooms and chopped onion to the skillet containing the bacon drippings. Cook these ingredients, stirring frequently, for 10 minutes. Drain any excess liquid. Mix most of the crumbled bacon into the skillet, saving 2 tablespoons for later. Stir the drained green beans into the skillet mixture and season with 0.75 teaspoon of black pepper. Transfer this combined mixture into a 2 quart baking dish.
  4. Warm the jar of cheese sauce in the microwave until it is melted. Pour the melted cheese sauce evenly over the green bean mixture in the baking dish. Finish by sprinkling the reserved 2 tablespoons of crumbled bacon over the top before serving.
