Cheesy Gnocchi Casserole with Ham and Peas

This Italian main course is a speedy and satisfying casserole. Potato gnocchi is simmered with diced ham, onions and thyme in a chicken broth, then combined with peas and cream. Topped with shredded Gruyere cheese and finished under the broiler, it creates a golden, bubbling dish perfect for four people.

Cheesy Gnocchi Casserole with Ham and Peas

Ingredients

  • 1 tablespoon unsalted butter
  • 1 onion, chopped
  • One 8-ounce piece deli ham, diced
  • 1/2 teaspoon chopped fresh thyme
  • 1/2 cup low-sodium chicken broth
  • One 17.5-ounce package potato gnocchi
  • 1 cup frozen peas, thawed
  • 1/4 cup double cream
  • Salt and freshly ground black pepper
  • 1 cup shredded Swiss or Gruyere cheese

Method

  1. Set your broiler to high heat.
  2. Place the butter in a large ovenproof skillet and melt it. Cook the chopped onions until they soften, which should take about 3 minutes.
  3. Mix in the diced ham and thyme, cooking further until the ham takes on a light brown colour.
  4. Pour in the chicken broth along with 3/4 cup of water, bringing the mixture to a simmer.
  5. Add the package of gnocchi, give it a good stir, then cover the skillet. Cook until the gnocchi becomes slightly tender, approximately 5 minutes.
  6. Take the skillet off the heat. Remove the lid and stir through the thawed peas, double cream, 1/4 teaspoon of salt and 1/4 teaspoon of pepper.
  7. Scatter the shredded cheese evenly over the top. Place under the broiler until the cheese is golden and bubbly, about 3 minutes.
  8. Serve the casserole immediately.
