Cheesy Gluten-Free Loaf - Large (ABM)
This recipe creates a substantial 2-pound gluten-free loaf using a bread maker. It combines a unique flour blend including brown rice, potato starch, and quinoa flours with three types of cheese for a rich flavour. The method is designed for a convection bread machine, with specific guidance on ingredient temperatures and machine settings to ensure a successful bake. The total preparation and cooking time is managed entirely by the appliance.
Ingredients
- 1 3/4 cups low-fat milk, heated to 80-90 F
- 3 tablespoons olive oil
- 2 large eggs, at room temperature (gently and safely warm cold eggs by placing whole eggs in a bowl and covering with moderately hot ta)
- 3 tablespoons honey
- 1 teaspoon cider vinegar
- 1 1/2 teaspoons salt
- 2 cups brown rice flour
- 1 cup potato starch
- 1/2 cup tapioca flour
- 1/4 garfava flour
- 1/4 cup quinoa flour
- 2 1/2 teaspoons xanthan gum
- 3/4 teaspoon gelatin
- 1/3 cup provolone cheese, shredded
- 2 tablespoons provolone cheese, shredded
- 1/3 cup mozzarella cheese, shredded
- 2 tablespoons mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 1/4 teaspoons active dry yeast, instant or 2 1/4 teaspoons active dry yeast, bread machine
Method
- Fit the kneading paddle into the bread pan.
- Pour the warmed milk, olive oil, eggs, honey and cider vinegar into the bread pan.
- Combine all the other ingredients apart from the yeast in a separate bowl, mixing them thoroughly. Transfer this dry blend into the bread pan.
- Finally, add the yeast to the bread pan.
- Insert the bread pan into the convection bread maker.
- Use the Menu button to choose the Gluten Free programme.
- Select the Crust option and pick Medium, or your preferred setting.
- Choose the dough size using the Loaf button.
- Initiate the cycle by pressing Start. this will handle mixing, kneading, rising and baking.
- During the kneading phase, use a spatula to scrape down the sides of the pan for an even mix.
- Once the cycle finishes, take the loaf from the machine and place it on a wire rack to cool completely before slicing.
