This creamy and flavourful white sauce is enriched with garlic, thyme, and nutmeg, then finished with a generous amount of melted parmesan and Swiss cheese. It creates a versatile topping or base for numerous dishes. The entire process takes about 20 minutes to complete, yielding approximately four and a half cups of sauce. You can easily adjust its thickness by varying the amount of cream added during cooking.

Cheesy Garlic White Sauce

Ingredients

  • 1/3 cup butter
  • 1/3 cup flour
  • 3 cups half-and-half cream (use 3-1/2 cups for a thinner texture)
  • 1 -2 tablespoon fresh minced garlic (or to suit taste, I like lots!)
  • 1/8 teaspoon ground nutmeg
  • 1/2-1 teaspoon dried thyme (or to suit taste)
  • fresh ground black pepper
  • 1/2-3/4 cup grated parmesan cheese
  • 2 cups grated swiss cheese (Swiss is best) or 2 cups cheddar cheese (Swiss is best)
  • salt (to taste)

Method

  1. Melt the butter in a heavy-bottomed saucepan.
  2. Stir in the minced garlic, thyme, nutmeg and black pepper, cooking for 1 minute.
  3. Whisk in the flour and continue to cook the mixture for 2 minutes.
  4. Gradually pour in the cream while whisking. Bring it to a light boil, stirring constantly for 2-3 minutes until thick and bubbly. Add more cream here for a thinner consistency.
  5. Lower the heat and add the grated parmesan and Swiss cheese, stirring until fully melted.
  6. Taste the sauce and add salt as needed.
