Cheesy Garlic Rolls
These savoury rolls make a fantastic appetiser. Garlic cloves are simmered in broth and wine until tender, then stuffed into sweet rolls with shredded Fontina cheese. The rolls are drizzled with the remaining cooking liquid, brushed with oil, and baked until the cheese is perfectly melted and the rolls are warmed through. The result is a wonderfully aromatic and cheesy bite, ideal for serving warm. The entire process takes about 25 minutes to complete.
Ingredients
- 1/3 cup peeled garlic (24 cloves or 2-3 bulbs)
- 2/3 cup chicken broth
- 1/2 cup dry white wine
- 1 (1/2 ounce) package hawaiian sweet rolls or 1 (1/2 ounce) package dinner roll
- 1/2 cup shredded Fontina cheese (2 oz)

Method
- Combine the garlic, chicken broth, and white wine in a small, heavy-based saucepan.
- Bring the mixture to a boil, then lower the heat.
- Allow it to boil gently without a lid for about 25 minutes, until the garlic is soft and only one third of the liquid is left.
- Heat your oven to 325.
- Put the dinner rolls into a greased 8x8x2 inch baking pan.
- Cut a half-inch deep "X" into the top of every roll, gently pulling them open a little.
- Fill each opening with the cooked garlic cloves and shredded Fontina, pressing the mixture lightly into the bread.
- Pour the leftover broth mixture from the pan over the filled rolls.
- Use olive oil to brush the exterior of each roll.
- Bake for 8-10 mintes until the rolls are hot and the cheese has melted.
- Serve the rolls while they are still warm.
- This recipe yields 6 appetizer servings.
