Cheesy Garlic Chicken
This family approved chicken recipe is straightforward to prepare. Chicken breasts are baked with fresh tomato and a blended sauce made from a savoury herb and garlic soup mix. It is finished with a layer of melted mozzarella and parmesan cheese for a deliciously cheesy result. The dish can be easily doubled for a larger gathering without affecting its flavour.
Ingredients
- 4 boneless skinless chicken breast halves (about 1 1/4 lbs)
- 1 medium tomatoes, coarsely chopped (or 1 small can diced tomatoes)
- 1 (1 ounce) envelope Lipton Recipe Secrets savory herb with garlic soup mix
- 1/3 cup water
- 1 tablespoon olive oil or 1 tablespoon vegetable oil
- 1 cup shredded mozzarella cheese (about 4 ounces)
- 1 tablespoon grated parmesan cheese
Method
- Set your oven to heat to 400°F.
- Place the chicken breast halves into a 13x9-inch baking dish and scatter the chopped tomato over the top.
- Whisk the envelope of soup mix together with the water and oil in a small bowl until fully combined.
- Drizzle the blended soup mixture evenly over the chicken in the dish.
- Bake without a cover for 20 minutes, or until the chicken is cooked through with no pink colour remaining.
- Sprinkle the shredded mozzarella and grated parmesan cheese over the chicken and return to the oven for 5 minutes, or until the cheese has melted.
- You can serve this dish with crusty Italian bread or garlic Texas Toast if you like.
