Cheesy Garlic Cauliflower Mock Breadsticks
These savoury breadsticks use blended cauliflower as a low carb base, mixed with garlic, eggs, and mozzarella. The mixture is patted into a pan and baked until golden, then topped with more cheese. They offer a delicious, cheesy alternative to traditional breadsticks. The recipe yields one pan, suitable for eight servings.
Ingredients
- 1 head cauliflower
- 4 garlic cloves, minced
- 1 tablespoon olive oil
- 3 eggs, beaten
- 1 cup mozzarella cheese, divided
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1 dash pepper
Method
- Cut the cauliflower head into chunks and microwave for about 8 minutes until tender. Allow it to cool slightly afterwards.
- Heat your oven to 450.
- Process the cooked cauliflower and minced garlic in a food processor. While blending, pour in the olive oil and continue until the mixture resembles mashed potatoes.
- Combine the cauliflower blend, beaten eggs, 1/2 cup of the mozzarella, onion powder, salt, and pepper in a large bowl.
- Lightly oil an 11.5 x 7 inch baking pan. Press the cauliflower mixture into the pan to form an even layer roughly 1/2 inch thick.
- Bake at 450 degrees for 25 minutes or until the surface begins to turn golden brown.
- Sprinkle the rest of the cheese over the top and return to the oven just until it melts.
- Let the bake cool for a few minutes before slicing into breadsticks and serving.
