Cheesy Garlic Breadsticks

Ingredients

  • 1 1/2 cups warm water
  • 2 1/4 teaspoons yeast
  • 1 lb bread flour
  • 1/4 cup powdered milk
  • 3 teaspoons sugar
  • 3 teaspoons olive oil
  • 1 1/2 cups grated cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 4 tablespoons sesame seeds
  • 1 teaspoon salt
  • 1/4 cup melted butter
  • 3 -4 garlic cloves, minced

Method

  1. Warm the water to 105-110 degrees farenhight, then stir in the yeast and allow it to proof.
  2. Put the bread flour, powdered milk, sugar, and olive oil into a mixing bowl.
  3. Divide the 1 1/2 cups of grated cheddar cheese equally. Mix one portion into the flour bowl and keep the other portion aside.
  4. Transfer the flour mixture and the proofed yeast to a stand mixer. Knead using the low setting for 5-8 minutes.
  5. Shape the dough into a ball, cover it, and leave it to rise for 1 hour.
  6. Combine the reserved cheddar cheese with the 1/4 cup of grated parmesan. Stir in the panko breadcrumbs, sesame seeds, and salt, then set this mixture aside.
  7. Mix the melted butter with the minced garlic in another bowl. Leave it to stand for at least 30 minutes so the flavours meld.
  8. Once the dough has doubled in size, divide it into 32 pieces. Roll each piece into a breadstick shape.
  9. Use a pastry brush to coat one breadstick with the garlic butter. Then roll it thoroughly in the prepared cheese and breadcrumb mixture.
  10. Put the coated breadstick on a baking tray and repeat the process with all the remaining dough pieces.
  11. Bake in an oven preheated to 400 degrees for 11-12 minutes, until they turn a golden brown colour.
