This soft, homemade bread is a versatile side that complements many family meals. The dough is made with white bread flour, yeast, olive oil and honey, then topped with a garlic butter mixture, grated mature cheddar and fresh thyme leaves. After proving, it bakes until golden. It yields 12 squares and takes about 90 minutes from start to finish.

Cheesy Garlic Bread

Ingredients

  • 500g strong white bread flour
  • 7g sachet/1.5 tsp fast-action yeast
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 tbsp clear honey
  • 2 garlic cloves crushed
  • 25g soft butter
  • 100g mature cheddar grated
  • handful thyme leaves

Method

  1. Place the strong white bread flour, fast-action yeast and salt into a large mixing bowl. Combine 300ml of hand-hot water with the olive oil and clear honey in a jug, then pour this liquid into the dry ingredients while stirring to form a soft dough.
  2. Transfer the dough to a surface dusted lightly with flour. Knead it for 5 mins until it is no longer sticky, adding a small amount of extra flour if required. Stretch the dough to fit the dimensions of your Swiss roll tin.
  3. Blend the crushed garlic cloves with the soft butter. Dot this garlic butter mixture across the surface of the dough. Scatter the grated mature cheddar over the top and sprinkle with the thyme leaves. Cover the tin with lightly oiled cling film and allow the bread to rise in a warm spot for 40 mins.
  4. Preheat your oven to 200C/fan 180C/gas 6. Take off the cling film and bake the bread for 30 mins until it is golden and well-risen. Let it cool for 10 mins before slicing into 12 pieces and serving.
