Cheesy French Onion Mashed Potatoes
This comforting side dish blends classic mashed potatoes with the rich flavour of French onion dip and melted cheese. The potatoes are boiled until tender, then whipped with the dip, milk, and margarine for a creamy texture. Finally, shredded cheese is folded in for a gooey finish. It's a simple, flavourful twist on traditional mash, perfect for serving six people. The entire process takes about 30 minutes from start to finish.
Ingredients
- 5 medium potatoes (peeled and washed)
- 1 cup shredded colby-monterey jack cheese
- 1/3 cup French onion dip
- 1/3-1/2 cup milk
- 1/4 cup margarine
- salt and pepper
Method
- Cut the peeled potatoes into bite-sized cubes. Put them in a medium saucepan and add enough water to cover them completely. Boil the potatoes until they are tender, which should take about 15 minutes.
- Once the potatoes are cooked, drain all the water from the pan. You can return the potatoes to the same saucepan or transfer them to a medium-sized mixing bowl.
- Using an electric mixer set to medium speed, beat the potatoes until no large lumps remain and they are broken up.
- Spoon the French onion dip into the bowl with the potatoes. Continue mixing with the electric mixer until the dip is fully incorporated and the mixture looks smooth.
- Pour in the milk, starting with 1/3 cup. Mix everything thoroughly until the milk is well combined.
- Add the margarine to the bowl along with your preferred amount of salt and pepper. Remember the dip contains salt, so you may wish to taste before adding extra.
- Keep mixing until the margarine has completely melted into the warm potatoes. Then, add the shredded cheese and mix again until the cheese is evenly distributed and well blended.
- Check the consistency of your mashed potatoes. If you prefer them thinner or creamier, you can mix in a little more milk until you achieve your desired texture.
