Cheesy Fish Grills
This tempting British main course is a super-quick dinner option, ready in just 25 minutes. Chunky white fish fillets are grilled and topped with scrunched ham, grated mature cheddar, and sliced spring onions for a flavourful and satisfying meal. Ingredients
- 4 chunky skinless white fish fillets, such as hoki or cod, about 500g/1lb 2oz total weight
- oil for brushing
- 4 thin slices of ham
- 50g grated mature cheddar
- 2 spring onions sliced at an angle
Method
- Set your grill to high and lightly oil a large, shallow heatproof dish. Place the fish fillets in the prepared dish with a little space between them and brush them with oil. Grill for 2 minutes.
- Take the dish from under the grill and turn each fillet over. Top every piece of fish with a scrunched slice of ham. Combine the grated cheese and sliced spring onions, then scatter this mixture over the fish. Season with salt and pepper. Place back under the grill for 5 minutes, until the fish flakes easily when tested with a knife. Serve alongside green vegetables.
