Cheesy Fish Grills

Ingredients

  • 4 chunky skinless white fish fillets, such as hoki or cod, about 500g/1lb 2oz total weight
  • oil for brushing
  • 4 thin slices of ham
  • 50g grated mature cheddar
  • 2 spring onions sliced at an angle

Method

  1. Set your grill to high and lightly oil a large, shallow heatproof dish. Place the fish fillets in the prepared dish with a little space between them and brush them with oil. Grill for 2 minutes.
  2. Take the dish from under the grill and turn each fillet over. Top every piece of fish with a scrunched slice of ham. Combine the grated cheese and sliced spring onions, then scatter this mixture over the fish. Season with salt and pepper. Place back under the grill for 5 minutes, until the fish flakes easily when tested with a knife. Serve alongside green vegetables.
