Cheesy Fiesta Chicken and Rice Bake
This satisfying bake is a versatile one dish meal. Seasoned chicken breasts are cooked over instant rice in a rich sauce made from nacho cheese and cream of chicken soups, broth, and milk. After baking, it's finished with a topping of shredded cheddar and salsa for a deliciously cheesy result. It serves four to six people and is ready in about 55 minutes.
Ingredients
- 4 -6 boneless skinless chicken breasts
- 2 cups success instant rice, uncooked
- 1 (10 1/2 ounce) can campbell's Fiesta nacho cheese soup
- 1 (10 1/2 ounce) can cream of chicken soup (use your favorite)
- 2/3 cup water
- 2/3 cup chicken broth
- 1/3 cup milk
- 1/3 cup onion
- 1 cup picante sauce or 1 cup salsa
- 1 cup shredded cheddar cheese
- salt
- pepper
- garlic powder
- butter
Method
- Heat your oven to 425 degrees.
- Use butter to grease an ovenproof dish.
- Combine the two soups, chicken broth, milk, water and onion in a bowl, then set this mixture aside.
- Apply salt, pepper and garlic powder to the chicken breasts according to your preference.
- Distribute the uncooked rice evenly across the base of the prepared dish.
- Pour the reserved soup mixture over the rice, trying to cover it as uniformly as you can.
- Arrange the seasoned chicken in the dish and cover it with a lid or foil.
- Bake the covered dish for 45 minutes, or until the chicken is fully cooked with no pink remaining.
- Allow the bake to rest for 3 minutes so the sauce can thicken slightly. During this time, add shredded cheese and salsa on top of each chicken piece.
