This classic baked macaroni cheese is a comforting dish featuring elbow pasta in a rich, homemade cheddar sauce. The sauce is made from a simple roux of butter and flour, combined with milk and sharp cheddar. After mixing with the cooked pasta, it's topped with more cheese and baked until beautifully golden and bubbly. It's a straightforward, satisfying meal that serves three people and takes about 50 minutes to prepare and cook.

Cheesy Elbow Mac & Cheese

Ingredients

  • 1 1/2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3/4 teaspoon salt
  • 1 dash pepper
  • 2 cups milk
  • 1 1/2 cups sharp cheddar cheese, shredded

Method

  1. Cook the elbow macaroni according to package directions, then drain it.
  2. Melt the butter in a saucepan, then whisk in the flour, salt, and pepper. Pour in the milk and cook, stirring constantly, until the mixture thickens and begins to bubble.
  3. Add 1 cup of the shredded sharp cheddar cheese to the saucepan and stir until it has fully melted into the sauce.
  4. Mix the cooked macaroni and the cheese sauce together in a buttered casserole dish. Scatter the remaining half cup of cheese over the top. Bake in an oven preheated to 350 for 30 minutes.
  5. For extra colour, you can dust the top with a small amount of paprika before baking.
