Cheesy Eggy Bread with Chunky Salad
This satisfying single-serving dish combines a classic British comfort food with a fresh side. Thick slices of crusty bread are dipped in a seasoned mixture of beaten eggs and finely grated cheddar, then fried until golden. It is accompanied by a simple, chunky salad made with halved cherry tomatoes, diced avocado and cucumber, and a handful of peppery rocket leaves. Ready in just 20 minutes, it's a perfect quick lunch or light dinner.
Ingredients
- 2 eggs beaten
- 50g cheddar very finely grated
- 2 chunky slices bread from a small crusty loaf, or 3 from a baguette
- handful cherry tomatoes halved
- 1/2 avocado diced
- chunk of cucumber diced
- small handful rocket
Method
- Place a quality non-stick frying pan on the heat (if using a regular pan, melt a knob of butter with a drizzle of oil first). In a shallow dish, whisk together the eggs and grated cheese, seasoning well. Submerge the bread slices to absorb some of the egg mixture, then press any remaining cheese onto their surface. Fry the bread for 2-4 minutes on each side until it turns a golden colour.
- Combine the halved cherry tomatoes, diced avocado, diced cucumber and rocket in a bowl, seasoning to taste. Serve this salad immediately with the hot cheesy eggy bread.
