Cheesy Eggplant Pesto Stacks

Ingredients

  • 1 lb eggplant
  • 2 teaspoons salt
  • 4 tablespoons pesto sauce
  • 4 ounces grated mozzarella cheese (about 1 cup)
  • 4 tablespoons grated fresh parmesan cheese or 4 tablespoons romano cheese

Method

  1. Set your oven to 375°F and lightly oil a shallow baking pan.
  2. Slice the eggplant crosswise into 12 pieces, each about 1/3 inch thick, and discard the ends.
  3. Place the slices in a single layer on some paper towels.
  4. Evenly sprinkle salt over both sides of the slices, then cover them with more paper towels.
  5. Allow the eggplant to stand for 30 minutes.
  6. Rinse off the salt and pat the slices thoroughly dry with paper towels.
  7. Place 4 eggplant slices in the prepared pan and spread each one with 1 teaspoon of pesto sauce.
