Cheesy Egg, Ham and Mushroom Casserole
This is an ideal brunch dish that requires planning ahead, as it must chill for at least 8 hours or up to a full day before it goes into the oven. Layers of cheese, a savoury saute of mushrooms, peppers and ham, and a rich egg custard come together. A final topping of cheese is added just before serving. The optional cayenne or hot sauce adds a subtle kick.
Ingredients
- 1 1/2 cups shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
- 1/4 cup butter
- 3/4 lb sliced fresh mushrooms (can use less)
- 7 green onions, chopped
- 1 red bell pepper, seeded and chopped
- 3 cups finely chopped cooked ham (can use less)
- 1/4 cup flour
- 8 large eggs
- 1 3/4 cups half-and-half cream or 1 3/4 cups milk
- 1/2 teaspoon seasoning salt (or use white salt to taste)
- 1 pinch hot sauce (optional) or 1 pinch Tabasco sauce (optional)
- black pepper
- 1 cup mozzarella cheese or 1 cup parmesan cheese
Method
- Lightly grease a 13 x 9-inch baking dish.
- Combine the 1 1/2 cups cheddar and 3/4 cup mozzarella cheeses in a bowl, then spread this mixture evenly across the base of the prepared dish.
- Place a large skillet on the cooker, melt the butter, then add the sliced mushrooms and cook for about 10 minutes until their liquid is released.
- Mix in the chopped green onions and red bell pepper, cooking for a further 3 minutes.
- Distribute the cooked mushroom mixture over the cheese layer, then scatter the finely chopped ham on top.
- Whisk the flour, eggs, half-and-half cream, seasoning salt, black pepper and optional cayenne in a bowl until smooth, then pour this over the ham.
- Cover the dish and place it in the refrigerator for 8-24 hours.
- Take the casserole out of the fridge 30 minutes before you plan to bake it.
- Preheat your oven to 350°F.
- Bake the casserole for 35-40 minutes.
- Sprinkle the remaining 1 cup of cheese over the top and bake for another 2-3 minutes until the cheese has melted.
