Cheesy Deep-Fried Hush Puppies
These golden, deep-fried bites combine cornmeal and sharp cheddar cheese for a savoury snack. The batter is flavoured with onion, black pepper and a hint of cayenne, then fried until crisp. They are best served hot and fresh from the oil, making them a perfect quick treat for sharing.
Ingredients
- 1 1/4 cups cornmeal
- 1/2 cup finely chopped onion
- 1/4 cup all-purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne pepper
- 3/4 cup evaporated milk
- 1 large egg, lightly beaten
- 1 tablespoon lemon juice
- 1 cup shredded sharp cheddar cheese

Method
- Place the cornmeal, chopped onion, flour, salt, baking soda, black pepper and cayenne pepper into a mixing bowl and combine them.
- Whisk the evaporated milk, beaten egg and lemon juice together in a separate small bowl, then fold this wet mixture into the dry ingredients along with the shredded cheddar cheese.
- Stir everything together just until the batter is combined and no dry streaks remain.
- Pour vegetable oil into a large pot or an electric frying pan until it reaches a depth of 2 inches and heat the oil to 350F.
- Carefully drop rounded tablespoons of the batter into the hot oil, turning them to ensure even browning.
- Fry the hush puppies, turning them frequently, for about 3 minutes or until they achieve a golden brown colour all over.
- Use a slotted spoon to lift the cooked hush puppies from the oil and let them drain on paper towels.
- Enjoy the hush puppies straight away while they are still hot and crisp.
