Cheesy Crunchy Taco Salad
This popular Mexican salad is a fantastic choice for barbecues, potlucks, or a simple family dinner in warm weather. It combines seasoned ground beef with crisp lettuce, kidney beans, tomatoes, olives, onion, and cheddar cheese. The dish is tossed with a zesty Catalina or Thousand Island dressing. For a vegetarian version, simply replace the meat with a can of black beans. The final touch is a generous handful of crushed tortilla chips added just before serving for maximum crunch.
Ingredients
- 1 lb browned ground beef
- 1 head shredded lettuce
- 1 can drained kidney bean
- 2 large diced tomatoes
- 1 can sliced black olives, drained
- 1 1/2 cups shredded cheddar cheese
- 1 medium finely chopped onion
- 1/2 bag of crushed tortillas chips or 1/2 bag plain Doritos
- 3/4-1 bottle Catalina dressing or 3/4-1 bottle thousand island dressing (I like Catalina the best)
Method
- Combine all the listed ingredients in a large bowl, but leave out the tortilla chips or Doritos.
- Place the mixed salad in the refrigerator to chill.
- Stir the crushed chips into the salad immediately before you are ready to serve it.
