Ingredients

1 (16 ounce) package elbow macaroni or 1 (16 ounce) package penne pasta
2 cups mozzarella cheese, grated
1 small rotisserie chicken, chopped into large chunks

Method

Cook the pasta following the package instructions, then drain it and set it aside. Grate the mozzarella cheese and set that aside as well.
Combine all the other ingredients in a mixing bowl. Pour this alfredo sauce mixture over the chopped chicken and mix everything together well. If preparing ahead, you can store the alfredo and chicken mix, the cooked pasta, and the grated mozzarella separately in the fridge.
Heat your oven to 350 degrees Fahrenheit. Lightly grease a 9 x 13 inch casserole dish.
Stir the alfredo and chicken mixture into the cooked pasta until combined. Transfer this mix into the prepared dish, spreading it out evenly. Sprinkle the grated mozzarella cheese evenly over the top.
Bake in the preheated oven for 45 - 60 minutes, until the top is golden and the casserole is bubbling.
