Cheesy Creamed Onion Bake
This indulgent bake is a celebration of onions in a rich, creamy cheese sauce. Sliced onions are baked until tender beneath a luxurious blend of Velveeta and Parmesan cheeses. The sauce is made from a simple roux and half-and-half, seasoned with a hint of spice. It results in a wonderfully comforting and flavourful side dish that serves four.
Ingredients
- 4 medium yellow onions, cut in half and then into thin slices (can use 5 onions)
- 1/4 cup butter
- 1/4 cup flour
- 2 cups half-and-half
- 1 teaspoon seasoning salt (or to taste, or use white salt)
- 1/8 teaspoon cayenne pepper or 1/8 teaspoon black pepper
- 1/4 cup grated parmesan cheese
- 2 cups Velveeta cheese, cut into small cubes
Method
- Preheat your oven to 325 degrees.
- Grease a 1-1/2-quart baking dish with butter.
- Arrange the thinly sliced onions in the prepared dish.
- For the sauce, melt the butter in a heavy saucepan.
- Whisk in the flour and cook for 2 minutes.
- Slowly pour in the half-and-half, whisking continuously until the mixture thickens.
- Take the pan off the heat and stir in the Parmesan and Velveeta cheeses until fully melted.
- Mix the cayenne pepper and seasoning salt into the cheese sauce.
- Evenly pour the finished sauce over the onions in the baking dish.
- Bake without a cover for approximately 45 minutes.
