Cheesy Corn
This classic American side dish is a rich and comforting bake, perfect for dinner. It combines both creamed and whole kernel corn with crispy crumbled bacon, cubes of butter and processed cheese. The mixture is baked until hot, set and wonderfully savoury. It yields a generous amount, making it ideal for feeding a crowd or for family meals.
Ingredients
- 6 slices bacon
- 2 (11 ounce) cans creamed corn
- 2 (11 ounce) cans whole kernel corn, drained
- 1 cup butter, cubed
- 2 cups cubed processed cheese
Method
- Set your oven to heat to 350 degrees F (175 degrees C).
- Arrange the bacon slices in a large, deep skillet. Cook them until they are browned all over. Once cooked, drain the fat and crumble the bacon.
- Take a 9x13 inch casserole dish and mix together the crumbled bacon, creamed corn, drained whole kernel corn, cubed butter and cubed processed cheese until well combined.
- Place the dish in the preheated oven and bake for 25 minutes. Remove it, give the mixture a stir, then return it to bake for a further 20 minutes, or until it is hot throughout and has set.
