These Mexican-style Cheesy Corn Poppers are a quick and flavourful starter, ready in 20 minutes to serve a crowd. A batter of sweetcorn, cheese, and taco seasoning is fried until golden and served with a creamy lime and coriander dip alongside chunky salsa. This recipe yields approximately 30 pieces, perfect for sharing.

Cheesy Corn Poppers

Ingredients

  • Oil for deep frying
  • 100g plain flour
  • 2 tbsp Old El Paso Garlic & Paprika Taco Seasoning Mix
  • 1 tsp baking powder
  • 1 egg
  • 170 ml milk
  • 1 can Green Giant™ sweetcorn, drained
  • 1 tbsp butter, melted
  • 50g grated mozzarella
  • 50g cheddar cheese, grated
  • 250ml mayonnaise or Old El Paso Cool Soured Cream Topping
  • 3 1/2 tbsp fesh lime juice
  • 2 tbsp fresh coriander, chopped
  • 1 Old El Paso Thick 'n' Chunky Mild Salsa (or Hot if you'd prefer)

Method

  1. Pour oil into a large saucepan or deep fat fryer to a depth of at least 2 inches and heat it to 175?C until it begins to bubble.
  2. In a large mixing bowl, combine the plain flour, taco seasoning mix, baking powder, egg, milk, drained sweetcorn, melted butter, and both grated cheeses, stirring thoroughly.
  3. Allow the prepared mixture to stand for 15 minutes.
  4. Carefully drop tablespoon-sized portions of the batter into the hot oil and cook them for 2 to 3 minutes until they achieve a deep golden brown colour.
  5. Take the cooked poppers from the oil and place them on paper towels to drain.
  6. For the dip, whisk together the mayonnaise or soured cream, 3 1/2 tbsp of fresh lime juice, and chopped coriander in a small bowl.
  7. Present the warm poppers accompanied by the freshly prepared dip and a dish of chunky salsa.
