Cheesy Corn Casserole

Ingredients

  • 1 (11 ounce) can whole kernel corn, drained
  • 1 (11 ounce) can cream-style corn
  • 1 (8.5 ounce) package dry corn bread mix
  • 1 (8 ounce) container sour cream
  • 1 cup shredded Cheddar cheese, divided
  • 1 small onion, diced
  • 1 large egg

Method

  1. Set your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
  2. In a large mixing bowl, thoroughly combine the drained whole kernel corn, cream-style corn, dry cornbread mix, sour cream, 3/4 cup of the shredded Cheddar, the diced onion and the egg. Once well blended, transfer this mixture into your prepared baking dish.
  3. Place the dish in your preheated oven and bake for 25 minutes. Remove it and evenly sprinkle the remaining 1/4 cup of Cheddar cheese over the top. Return it to the oven and bake for a further 10 to 15 minutes, until the cheese has melted. Allow the casserole to stand for a few moments before you serve it.
