Cheesy Corn Casserole
This classic American casserole is a wonderfully comforting side dish, perfect for family dinners. It brings together whole kernel and cream-style corn with a creamy blend of sour cream, cornbread mix, diced onion and egg. Topped with melted Cheddar cheese, it bakes into a golden, savoury bake that serves a crowd from a single 9x13-inch dish. The preparation is straightforward, requiring just 45 minutes from start to finish.
Ingredients
- 1 (11 ounce) can whole kernel corn, drained
- 1 (11 ounce) can cream-style corn
- 1 (8.5 ounce) package dry corn bread mix
- 1 (8 ounce) container sour cream
- 1 cup shredded Cheddar cheese, divided
- 1 small onion, diced
- 1 large egg
Method
- Set your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
- In a large mixing bowl, thoroughly combine the drained whole kernel corn, cream-style corn, dry cornbread mix, sour cream, 3/4 cup of the shredded Cheddar, the diced onion and the egg. Once well blended, transfer this mixture into your prepared baking dish.
- Place the dish in your preheated oven and bake for 25 minutes. Remove it and evenly sprinkle the remaining 1/4 cup of Cheddar cheese over the top. Return it to the oven and bake for a further 10 to 15 minutes, until the cheese has melted. Allow the casserole to stand for a few moments before you serve it.
