It combines creamy refried beans with mild green chillies and cheddar cheese, all warmed through for a comforting texture. Topped with extra cheese, it's an ideal quick snack for gatherings. The recipe makes enough for six people to enjoy with tortilla chips or quesadilla pieces.

Cheesy, Chunky Bean Dip

Ingredients

  • 1 (15 ounce) can refried beans (I use fat free)
  • 2 tablespoons water (or broth)
  • 2 tablespoons green chilies (mild, chopped)
  • 2 ounces cheddar cheese, shredded (or 1/2 cup shredded Mexican or Cheddar cheese)
  • 1/8 teaspoon cajun seasoning

Method

  1. Set aside 2 tablespoons of the shredded cheese for garnishing later.
  2. Warm the remaining ingredients together in a pan until the mixture starts to bubble.
  3. Transfer the hot dip into a bowl that holds about 2 cups and sprinkle the reserved cheese over the top.
