Cheesy, Chunky Bean Dip
This simple, crowd-pleasing dip was a happy accident, created in a hurry and now a favourite. It combines creamy refried beans with mild green chillies and cheddar cheese, all warmed through for a comforting texture. Topped with extra cheese, it's an ideal quick snack for gatherings. The recipe makes enough for six people to enjoy with tortilla chips or quesadilla pieces.
Ingredients
- 1 (15 ounce) can refried beans (I use fat free)
- 2 tablespoons water (or broth)
- 2 tablespoons green chilies (mild, chopped)
- 2 ounces cheddar cheese, shredded (or 1/2 cup shredded Mexican or Cheddar cheese)
- 1/8 teaspoon cajun seasoning
Method
- Set aside 2 tablespoons of the shredded cheese for garnishing later.
- Warm the remaining ingredients together in a pan until the mixture starts to bubble.
- Transfer the hot dip into a bowl that holds about 2 cups and sprinkle the reserved cheese over the top.
- Enjoy the dip while warm, accompanied by tortilla chips or slices of quesadilla.
