Cheesy Chorizo Frittata

Ingredients

  • 0.25 pound chorizo, crumbled
  • 1 (6 ounce) package baby spinach leaves
  • 2 cups cherry tomatoes, halved
  • 4 green onions, sliced
  • 6 eggs
  • 0.5 cup milk
  • 1.5 cups KRAFT Shredded Pepper Jack Cheese with a TOUCH OF PHILADELPHIA, divided

Method

  1. Set your oven to 375 degrees F (190 degrees C). In a large ovenproof skillet, cook the crumbled chorizo until done, stirring often. Take the chorizo out, leaving the drippings in the pan, and set it aside. Place the spinach in the same skillet and cook for 2 minutes or until just wilted, stirring frequently. Mix in the tomatoes, onions and the reserved chorizo, then take the skillet off the heat.
  2. In a separate bowl, whisk the eggs and milk together until combined. Stir in 1 cup of the cheese. Pour this mixture into the skillet with the other ingredients and gently stir to blend. Sprinkle the rest of the cheese over the top.
  3. Place the skillet in the oven and bake for 25 minutes or until a knife inserted into the centre comes out clean.
