This is a satisfying British main course that combines pork chops and potatoes in a single pan. The potatoes and onion are first roasted until golden, then topped with the chops. A simple cheese, mustard and milk mixture is spread over the meat before a final grill creates a deliciously melted, crispy finish. Cheesy Chops and Chips

Ingredients

  • 1kg potatoes peeled and thickly sliced
  • 1 onion finely sliced
  • splash of cider wine, water or stock
  • 2 tbsp oil olive if you've got it
  • 4 pork chops (about 175g/6oz each)
  • 100g hard cheese grated (we used cheddar)
  • 1 tbsp wholegrain mustard
  • 3 tbsp milk

Method

  1. Set your oven to 230C/fan 210C/gas 8. Combine the potatoes, onion, your chosen liquid and oil in a big bowl, seasoning as desired. Transfer this mix to a large sauté pan and roast for 20-30 mins until the potatoes begin to colour. Place the pork chops on top of the potatoes and return to the oven for a further 10 mins.
  2. As the potatoes cook, prepare the topping by blending the grated cheese, mustard and milk. After the chops have cooked for 10 mins, spoon the cheese mixture over them. Change the oven setting to grill. Position the pan under the grill for about 5 mins until the cheese is bubbling and the potatoes are crisp and golden. Serve immediately from the pan.
