Cheesy Chops and Potatoes (Crock Pot)

Ingredients

  • 4 pork tenderloin steaks
  • 1 1/2 teaspoons dried Italian herb seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons vegetable oil
  • 1 (10 1/2 ounce) can cheddar cheese soup
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1/2 cup water
  • 4 medium potatoes
  • 1 medium onion, thinly sliced

Method

  1. Remove any extra fat from the pork chops.
  2. Combine the dried Italian herb seasoning, garlic powder, salt, and pepper in a small bowl.
  3. Rub half of this seasoning blend onto the surface of the chops.
  4. Heat the vegetable oil in a large skillet and brown the chops on both sides, then set them aside.
  5. Turn the heat down to low.
  6. Drain any extra fat from the skillet.
  7. Pour in the cheddar cheese soup, cream of mushroom soup, and water, stirring to mix and lift any browned bits from the pan. Set this mixture aside.
  8. While preparing the sauce, peel the potatoes.
  9. Slice the peeled potatoes into a large bowl.
  10. Add the thinly sliced onion and the rest of the herb mixture to the bowl, tossing to coat everything evenly.
  11. Spread this potato and onion mixture across the base of the crock pot.
  12. Place the browned pork chops on top of the potatoes.
  13. Pour the reserved soup mixture evenly over the chops and potatoes.
  14. Cook on the low setting for 8 - 9 hours.
