Cheesy Chilli Toastie
This recipe transforms a classic cheese toastie into a lighter option packed with flavour. Finely grated Gouda is combined with fresh red chilli, spring onion and coriander for a zesty filling, then grilled between slices of wholemeal bread. It's a quick, satisfying choice for lunch or a snack, ready in under 10 minutes. Serve it with a side salad or a dip of your choice for an extra treat.
Ingredients
- 2 thin slices wholemeal bread
- 40 g Gouda cheese (finely grated)
- 1/2 small red chilli ( deseeded and finely chopped)
- 1 spring onion (trimmed and finely chopped)
- 2 g fresh coriander leaves (stalks removed and roughly chopped)
- small pinch of mild chilli powder
- salt and black pepper (to taste)
Method
- Combine the grated Gouda, chopped chilli, spring onion, coriander, chilli powder, salt and black pepper in a small bowl. Mix thoroughly. Set your grill to the medium setting to preheat.
- Take one slice of bread and position it on your grill pan rack. Distribute the cheese mixture evenly across the surface.
- Grill for about 2 minutes until the cheese begins to melt. Monitor it to prevent the bread edges from burning. Top with the second bread slice and grill again for about 1 minute until golden.
- Turn the toastie over and grill the other side for 30 seconds to 1 minute, until it turns golden. Slice into halves or quarters as desired. It pairs well with a fresh mixed salad. For added flavour, consider dipping it in sweet chilli sauce, ketchup or light mayonnaise, remembering to account for any extra calories.
