Cheesy Chilli Pizza

This cheesy chilli pizza is a fantastic choice for a speedy meal. It features a soft, homemade naan bread base, which is topped with a simple chilli-infused tomato sauce and plenty of grated Gouda cheese. After baking, it's finished with a drizzle of sweet chilli sauce and fresh coriander. Ready in just 12 minutes of cooking time, it's an ideal option for a satisfying lunch or dinner.

Cheesy Chilli Pizza

Ingredients

  • 250 g white self-raising flour
  • 1 tsp caster sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 250 g fat-free natural yoghurt
  • low-calorie cooking spray (for greasing)
  • 100 g passata
  • 1 tbsp tomato puree
  • pinch of mild chilli powder
  • 1/4 tsp garlic granules
  • 80 g Gouda cheese (finely grated)
  • 3 spring onions (trimmed and sliced)
  • 1 small red chilli (deseeded and finely chopped)
  • 1 tbsp ready-made sweet chilli sauce
  • 5 g fresh coriander leaves (stalks removed and roughly chopped)
  • salt and black pepper (to taste)

Method

  1. Sift the self-raising flour, caster sugar, salt and baking powder into a large bowl. Create a hollow in the middle and pour in the yoghurt. Use your fingers to slowly incorporate the flour into the yoghurt until a soft dough ball forms.
  2. Transfer the dough to a surface dusted with flour and knead thoroughly for 5 minutes until it becomes smooth. Lightly coat a large bowl with low-calorie spray. Put the dough inside, cover it with a plate.
  3. Leave the covered dough in a warm spot for about 45 minutes, until it has risen a little and feels puffy to the touch. Begin heating your oven to 200°C.
  4. Tip the dough onto a floured surface and roll it into a 28cm circle. Prepare a large baking tray with non-stick paper. Lay the rolled dough onto the lined tray.
  5. Combine the passata, tomato puree, mild chilli powder and garlic granules in a small bowl. Add salt and black pepper to season, then stir thoroughly. Spoon this mixture over the pizza base, spreading it out and leaving a 1cm border.
  6. Evenly distribute the finely grated Gouda cheese over the sauce. Top with the sliced spring onions and chopped red chilli. Bake in the hot oven for 10-12 minutes until the top is golden.
  7. Take the pizza from the oven and drizzle the ready-made sweet chilli sauce over it. Scatter the roughly chopped coriander leaves on top, slice into 10 pieces and serve immediately. It pairs well with a fresh mixed salad.
