Cheesy Chicken and Wild Rice Casserole
This comforting casserole is a delicious way to use leftover turkey or chicken. It combines quick cooking wild rice with a creamy mushroom soup and sour cream sauce, plenty of cheddar cheese, and a crunchy breadcrumb topping. Baked until golden and bubbly, it's a satisfying family meal that comes together in about 45 minutes.
Ingredients
- 6 1/4 ounces quick-cooking long grain and wild rice mix
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 celery, chopped
- 2 1/2 cups chopped cooked chicken or 2 1/2 cups cooked turkey
- 2 cups shredded cheddar cheese, divided
- 1 (10 1/2 ounce) can cream of mushroom soup
- 8 ounces sour cream
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup breadcrumbs or 1/4 cup panko breadcrumbs
Method
- Heat your oven to 350.
- Cook the rice mix following the packet instructions, then set it aside.
- Melt the butter in a large pan, then add the chopped onion and celery. Cook for 10 minutes.
- Mix in the prepared rice, chopped chicken, 1 1/2 cups of the cheese, the mushroom soup, sour cream, milk, salt, and pepper.
- Transfer this mixture into a lightly greased 11x7 inch or 2 quart baking dish.
- Sprinkle the breadcrumbs evenly over the top of the casserole.
- Bake at 350 for 25 minutes. Take it out, scatter the remaining cheese on top, and bake for another 5 minutes.
