Cheesy Chicken and Wild Rice Casserole

This comforting casserole is a delicious way to use leftover turkey or chicken. It combines quick cooking wild rice with a creamy mushroom soup and sour cream sauce, plenty of cheddar cheese, and a crunchy breadcrumb topping. Baked until golden and bubbly, it's a satisfying family meal that comes together in about 45 minutes.

Cheesy Chicken and Wild Rice Casserole

Ingredients

  • 6 1/4 ounces quick-cooking long grain and wild rice mix
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 celery, chopped
  • 2 1/2 cups chopped cooked chicken or 2 1/2 cups cooked turkey
  • 2 cups shredded cheddar cheese, divided
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 8 ounces sour cream
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup breadcrumbs or 1/4 cup panko breadcrumbs

Method

  1. Heat your oven to 350.
  2. Cook the rice mix following the packet instructions, then set it aside.
  3. Melt the butter in a large pan, then add the chopped onion and celery. Cook for 10 minutes.
  4. Mix in the prepared rice, chopped chicken, 1 1/2 cups of the cheese, the mushroom soup, sour cream, milk, salt, and pepper.
  5. Transfer this mixture into a lightly greased 11x7 inch or 2 quart baking dish.
  6. Sprinkle the breadcrumbs evenly over the top of the casserole.
  7. Bake at 350 for 25 minutes. Take it out, scatter the remaining cheese on top, and bake for another 5 minutes.
