Cheesy Chicken Tortilla Casserole
This satisfying casserole is a beloved family favourite. It layers shredded chicken in a creamy sauce with soft tortillas and plenty of melted cheese, baked until golden. The preparation is straightforward, making it a perfect choice for a cosy weeknight meal that serves six people. It requires just 50 minutes from start to finish.
Ingredients
- 6 -8 boneless chicken breasts
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 (10 1/2 ounce) can cream of chicken soup (use less if desired)
- 1 (16 ounce) container sour cream
- 8 tortillas (depends on pan size for tortilla size)
- 16 ounces shredded colby-monterey jack cheese (use more if desired)
Method
- Prepare the chicken by cooking it in an oven set to 350°F for about 10 minutes until it is completely white and cooked through. You can shred slightly thawed chicken in a food processor first, spreading it on a foiled sheet to bake. Once cooked, shred the chicken again.
- Take a large bowl and mix together the cream of mushroom soup, cream of chicken soup, sour cream and the shredded chicken. Add black pepper to season the mixture.
- In a baking dish, such as a 9x13 pan or pie pan, spread a thin layer of the chicken mixture to cover the base. Top this with a sprinkle of the shredded cheese. Place one or two tortillas over the cheese to form a layer, depending on your pan size. Repeat these layering steps until all the chicken mixture is used. Finish by covering the final layer with the rest of the cheese.
- Bake the assembled casserole at 350°F for about 30 minutes. Leave it in the oven a bit longer if the cheese has not yet turned a golden brown.
