Cheesy Chicken Tacos
These cheesy chicken tacos offer a delicious departure from the ordinary. They feature seasoned chicken strips cooked with a cheesy taco mix, paired with sauteed red and green bell peppers and red onion. The meal is completed with a Santa Fe pinto bean and rice mix, all wrapped in warm soft flour tortillas. It's a satisfying and flavourful one dish meal perfect for a family dinner.
Ingredients
- 1 lb boneless skinless chicken breast
- 1 1/4 ounces taco seasoning mix, Cheesy (I always use Old El Paso)
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 5 -7 soft flour tortillas
- 1 (8 ounce) package santa fe pinto red beans and rice mix
Method
- Cook the rice mix by following the directions provided on its package.
- Slice the chicken breasts into thin strips.
- Cook the chicken strips in a skillet, browning them as directed on the cheesy taco seasoning packet.
- Cut the bell peppers and red onion into slices and cook them in a separate skillet.
- Gently fluff the cooked rice, warm the tortillas, and then assemble your tacos with all the prepared fillings.
