Cheesy Chicken Stuffed Potatoes - Turbo Cooker
These cheesy chicken stuffed potatoes are a complete and healthy meal prepared entirely in a turbo cooker. Red potatoes are steamed, then hollowed out and filled with a savoury mixture of cooked chicken, onion, garlic, cheddar cheese, sour cream and egg. The stuffed potatoes are then steamed again until heated through, resulting in a comforting and flavourful dish ready in about 30 minutes.
Ingredients
- 6 medium red potatoes
- 1/2 medium onion
- 2 -3 garlic cloves
- 2 boneless skinless chicken breasts
- 1 cup cheddar cheese
- 1/3 cup sour cream
- 1 egg, beaten
- salt
- pepper
- paprika
Method
- Wash the potatoes, slice them in half, and arrange them in the steam rack. Pour 2 cups of water into the cooker base, cover, and cook with the valve open for 20 minutes. Ensure the pan does not run dry and avoid overcooking.
- As the potatoes cook, finely chop the garlic and onion.
- Take the potatoes from the cooker and allow them to cool. Discard the cooking water. Put the chicken breasts in the cooker base with 3-4 tablespoons of water. Cover, set the valve to open, and cook for 3 minutes. Flip the chicken, add another 3-4 tablespoons of water, cover, and cook for a further 3 minutes. Check if the chicken is cooked through. if not, repeat this step. Remove the chicken and chop it into small pieces. Add the onion to the cooker with 3-4 tablespoons of water. Cover, close the valve, and cook for 3 minutes. Stir in the garlic, adding another 3-4 tablespoons of water if the mixture appears dry. Cover, close the valve, and cook for 2 more minutes. If excess liquid remains, cook until it has nearly evaporated, then remove the mixture from the cooker.
- Carefully scoop the flesh from each potato half, leaving a sturdy shell. Place the empty shells back into the steam rack inside the cooker. Mash the scooped potato in a bowl with the onion and garlic mixture, cheddar cheese, sour cream, beaten egg, salt, and pepper. Mix until fairly smooth, then fold in the chopped chicken.
- Generously fill each potato shell with the mixture, mounding it up. Dust the tops with paprika. Add 1 1/2 cups of water to the cooker base, cover, and cook with the valve open for 15 minutes.
