Cheesy Chicken Strips

Ingredients

  • 4 boneless skinless chicken breast halves (about 1 1/4 pound)
  • 2 cups cheese crackers, crushed to 1 cup (any crunchy type cheese flavored snack like cheetos, etc)
  • 1/2 cup finely shredded cheddar cheese (finely mixes nicer but regular shredded gives a more cheesey texture)
  • 1 egg
  • barbecue sauce
  • ketchup
  • ranch dressing

Method

  1. Preheat your oven to 400.
  2. Prepare a 15x10 jelly roll pan by spraying it with cooking spray or lining it with foil.
  3. Slice the chicken breasts lengthwise into strips about 1/2 inch wide, or cut them into nugget shapes.
  4. Combine the crushed cheese crackers and shredded cheddar cheese in a sealable plastic bag.
  5. Whisk the egg in a separate bowl, then add the chicken pieces and toss to coat them thoroughly.
  6. Take the chicken out of the egg, letting any extra liquid drip away.
  7. Transfer the chicken pieces into the bag containing the crumb and cheese mixture.
  8. Seal the bag tightly and shake it well to coat all the chicken evenly.
  9. Remove the coated chicken from the bag and arrange the pieces in a single layer on your prepared baking sheet.
  10. Bake for 10 to 12 minutes, until the chicken is cooked through with no pink in the centre. It helps to turn the pieces over after about 8 minutes.
  11. Serve the hot chicken strips immediately with barbecue sauce, ketchup, or ranch dressing for dipping.
