Cheesy Chicken Strips
This quick family favourite coats chicken strips in a mixture of crushed cheese crackers and cheddar cheese before baking. Ready in just 15 minutes, the result is a crispy, flavourful main dish. Serve the hot strips with your choice of barbecue sauce, ketchup, or ranch dressing for dipping. It's a clever way to use up leftover snack crumbs for a tasty, high-protein dinner.
Ingredients
- 4 boneless skinless chicken breast halves (about 1 1/4 pound)
- 2 cups cheese crackers, crushed to 1 cup (any crunchy type cheese flavored snack like cheetos, etc)
- 1/2 cup finely shredded cheddar cheese (finely mixes nicer but regular shredded gives a more cheesey texture)
- 1 egg
- barbecue sauce
- ketchup
- ranch dressing
Method
- Preheat your oven to 400.
- Prepare a 15x10 jelly roll pan by spraying it with cooking spray or lining it with foil.
- Slice the chicken breasts lengthwise into strips about 1/2 inch wide, or cut them into nugget shapes.
- Combine the crushed cheese crackers and shredded cheddar cheese in a sealable plastic bag.
- Whisk the egg in a separate bowl, then add the chicken pieces and toss to coat them thoroughly.
- Take the chicken out of the egg, letting any extra liquid drip away.
- Transfer the chicken pieces into the bag containing the crumb and cheese mixture.
- Seal the bag tightly and shake it well to coat all the chicken evenly.
- Remove the coated chicken from the bag and arrange the pieces in a single layer on your prepared baking sheet.
- Bake for 10 to 12 minutes, until the chicken is cooked through with no pink in the centre. It helps to turn the pieces over after about 8 minutes.
- Serve the hot chicken strips immediately with barbecue sauce, ketchup, or ranch dressing for dipping.
