Cheesy Chicken Spaghetti Pie
This comforting dish features a unique crust made from cooked vermicelli, egg, butter and Parmesan cheese. The filling combines cubed chicken with a cheesy sauce, mixed vegetables and tomatoes with green chillies for a flavourful bake. It is assembled in a pie dish and baked until golden. Ideal for a family meal, it yields 8 servings and takes about 70 minutes to prepare and cook.
Ingredients
- 7 ounces of uncooked vermicelli or 7 ounces spaghetti
- 1 egg
- 1/4 cup margarine or 1/4 cup butter
- 1/3 cup grated parmesan cheese
- 1 tablespoon margarine or 1 tablespoon butter
- 2 tablespoons finely chopped onions
- 1 cup frozen mixed vegetables
- 1 (10 ounce) can tomatoes and green chilies, drained
- 1 tablespoon Worcestershire sauce
- 3/4 lb processed cheese spread, cubed
- 2 cups of cubed cooked chicken
Method
- Cook the vermicelli according to the package directions until it reaches your preferred doneness.
- Drain the pasta. Preheat your oven to 350 degrees. Coat a 9 1/2 inch deep dish pie pan with non stick cooking spray. In a large bowl, beat the egg, then mix in 1/4 cup of margarine and the Parmesan cheese. Add the cooked vermicelli and toss to coat it evenly. Spoon this mixture into the prepared pan, pressing it slightly up the sides to create a crust.
- Melt 1 tablespoon of butter in a medium saucepan. Add the chopped onion and cook while stirring for 3 to 5 minutes until tender.
- Stir in the frozen mixed vegetables, the drained tomatoes with green chillies and the Worcestershire sauce. Mix everything together well.
- Continue cooking the vegetable mixture for five minutes.
- Add the cubed processed cheese spread to the saucepan. Cook while stirring constantly until the cheese has fully melted.
- Mix the cubed cooked chicken into the cheesy vegetable filling.
- Spoon this chicken and cheese filling evenly into the vermicelli lined pie pan.
- Bake at 350 degrees for 20 to 25 minutes. The filling should be set and the crust should turn a light golden brown.
- Allow the pie to stand for 10 minutes before you serve it.
- Cut the pie into wedges to serve.
