Cheesy Chicken Soup

Ingredients

  • 4 slices bacon
  • 1 lb chicken breast, cubed
  • 1 cup onion, chopped
  • 1 cup red bell pepper, diced
  • 2 garlic cloves, minced
  • 5 cups chicken broth
  • 1 1/2 cups potatoes, peeled and diced
  • 2 1/2 cups corn kernels
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper

Method

  1. Coat the base of a large saucepan with a little olive oil.
  2. Fry the bacon in the pan until it becomes crisp.
  3. Take the bacon out of the pan.
  4. Reserve the bacon for later.
  5. Put the cubed chicken, chopped onion, diced pepper and minced garlic into the pan with the bacon fat and cook for 5 minutes.
  6. Pour in the chicken broth and add the diced potatoes, then bring the mixture to a boil.
  7. Put the lid on the pan, lower the heat and let it simmer for 20 minutes until the potatoes are soft.
  8. Mix in the corn kernels.
  9. Measure the flour into a separate bowl.
  10. Slowly pour the milk into the flour while whisking to combine, then add this mixture to the soup.
  11. Continue cooking the soup for 15 minutes, stirring often, until it thickens.
  12. Add the shredded cheddar, salt, pepper and cayenne pepper and stir until the cheese melts.
  13. Break the reserved bacon into pieces and scatter it over the top of the soup.
