Cheesy Chicken Soup
This satisfying soup is a guaranteed family favourite. It combines crispy bacon, tender chicken, sweet corn and potatoes in a rich, creamy broth flavoured with cheddar cheese and a hint of cayenne. It's a complete, warming meal that appeals to all ages.
Ingredients
- 4 slices bacon
- 1 lb chicken breast, cubed
- 1 cup onion, chopped
- 1 cup red bell pepper, diced
- 2 garlic cloves, minced
- 5 cups chicken broth
- 1 1/2 cups potatoes, peeled and diced
- 2 1/2 cups corn kernels
- 1/2 cup all-purpose flour
- 2 cups milk
- 1 cup cheddar cheese, shredded
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper
Method
- Coat the base of a large saucepan with a little olive oil.
- Fry the bacon in the pan until it becomes crisp.
- Take the bacon out of the pan.
- Reserve the bacon for later.
- Put the cubed chicken, chopped onion, diced pepper and minced garlic into the pan with the bacon fat and cook for 5 minutes.
- Pour in the chicken broth and add the diced potatoes, then bring the mixture to a boil.
- Put the lid on the pan, lower the heat and let it simmer for 20 minutes until the potatoes are soft.
- Mix in the corn kernels.
- Measure the flour into a separate bowl.
- Slowly pour the milk into the flour while whisking to combine, then add this mixture to the soup.
- Continue cooking the soup for 15 minutes, stirring often, until it thickens.
- Add the shredded cheddar, salt, pepper and cayenne pepper and stir until the cheese melts.
- Break the reserved bacon into pieces and scatter it over the top of the soup.
